Chicken Curry (Kozhi Assaadu Kozhambu) / Curry de Poulet aux tomates et lait de coco



It’s over!!! I mean, the spring break :-) and my teddies back to school, all set for the last trimester..... J, tied up with his work as usual and as for me, I‘m in my high spirits today and hope the same for all my readers too!!!

This time, it's one of my family classics.... The name “ Assaadu” is what we call this curry at home and I even doubt if the name is familiar to all Pondicherrians; as like for any other dishes, each dish has its own name and unique taste according to the way of preparation of each country, region/ state or each home and this is one among those common curries which we make very often at home. It goes very well with plain Rice/ any leavened Bread/ Chapati/ Parotta/ Naan/ Dosai / Idlis Hope you'd like it too.





Ingredients/ Ingrédients:


1 kg chicken (chopped, cleaned & pat dried)/ 1 kilo de poulet (coupé, nettoyé et séché avec une serviette de cuisine)
 Whole spices (2 Bay leaves, 3 cloves, 1 cinnamon stick, 1 star anise, 2 or 3 cardamom pods)/ Epices entières (2 feuilles de laurier, 3 clous de girofle, 1 bâton de cannelle, 1 anis étoilé, 2 ou 3 gousses de cardamome)
 3 big Onions (chopped and fried in two tbsps of oil until slighty brown)/ 3 gros oignons (hachés et dorés préalablement dans deux cuillères à soupe d'huile)
10 garlic pods/ 10 gousses d'ail
5 cm ginger chopped/ 5 cm de gingembre, coupé en petits morceaux
3 green chilies/ 3 piments verts
2 tbsps Coriander seeds / 2 cuillères à soupe de graines de coriandre
2 tbsps Poppy seeds/ 2 cuillères à soupe de graines de pivot blancs
3 big tomatoes chopped roughly/ 3 grosses tomates hachées grossièrement
1 tsp cumin powder/ 1 c. à café de cumin en poudre
1 tsp fennel seeds powder/ 1 c. à café de graines de fenouil en poudre
1 tsp chilly powder/ 1 c. à café de piment rouge en poudre
½ tsp turmeric/ ½ c. à café de curcuma
Salt/ Sel
5 tbsp Ghee or Oil / 5 c. à table de beurre clarifié ou d’huile
1 cup yoghurt/ 1 pot d’yaourt
250ml Coconut milk/ 250ml de lait de coco
Some coriander leaves (for topping, optional) / Quelques feuilles de coriandre (pour la garniture, facultatif)

Method/ La Préparation:

Mix the chicken pieces and the yoghurt together in a bowl, and set aside.
Dans un bol, mélanger le yaourt avec les morceaux de poulet et réserver.

Soak the poppy seeds and the coriander seeds in half a cup of warm water 15 mins before blending them to a fine paste. Keep aside.
Faire tremper les graines de pavot et les graines de coriandre dans une demi-tasse d'eau tiède 15 minutes avant de les mixer afin d’obtenir une pâte fine. Gardez séparément.

Grind the fried onions to a paste. Blend the tomatoes separately and puree them as well.
Mixer/broyer les oignons dorés précédemment pour faire une purée. Mixer les tomates séparément et les réduire en purée aussi.

Heat the ghee or the oil in a saucepot, splutter the whole spices, add the pasted onions and the green chilies and fry for a minute. (At this point, you need to partially close the pot with a lid to avoid any splashes).
Faites chauffer le beurre clarifié ou l'huile dans une casserole et y faites dorer les épices entières ; ajouter les oignons en purée et les piments verts et les faire sauter pendant une minute. (Vous auriez besoin de fermer partiellement la casserole avec un couvercle afin d’éviter toute éclaboussure).

Reduce the flame to medium high and add the ginger garlic paste and the pasted coriander/poppy seeds mixture; fry until the oil oozes out; add the cumin & fennel seeds powders, chilly powder, turmeric powder and salt and stir-fry for a minute.
Ajouter les pâtes d’ail et de gingembre, de la coriandre et de graines de pavot; Remuer jusqu'à ce que l'huile se sépare de la sauce ; Ajouter le cumin et les graines de fenouil en poudre, piment en poudre, poudre de curcuma et le sel et remuer encore pendant une minute.

Now, add the tomato puree and fry until the oil separates. Put in the chicken. Stir until the meat is well coated with the sauce for a minute or two.
Ajoutez la purée de tomate et faites revenir jusqu'à ce que l'huile se sépare. Ajouter le poulet. Remuer jusqu'à ce que la viande soit bien recouvert de la sauce, soit pendant une minute ou deux.

Add 2 or 3 cups of warm water according to the consistency you need but the sauce should not be too watery; Taste and correct the salt if necessary. When it boils, close the pot with a lid and cook for about 15 to 20 minutes or until the meat is done. Add the coconut milk, stir well and switch it off the flame after a couple of minutes.
Ajouter 2 ou 3 tasses d'eau chaude, en fonction de la consistance désirée, mais, la sauce ne doit pas être trop liquide; Goûter et rectifier le sel si nécessaire. Quand la sauce bouillit, fermer la casserole avec un couvercle et cuire pendant environ 15 à 20 minutes ou jusqu'à ce que la viande soit cuite.
Ajouter le lait de coco, mélangez bien et éteignez la flamme au bout de deux/ trois minutes.

Sprinkle some coriander leaves and serve.
Parsemer de quelques feuilles de coriandre et servir.

oui, on trouve facilement du pavot blanc à la chapelle. on appelle "cassa cassa" en tamoul, et oui, ça se prononce comme le verbe casser ,lol; Bonne journée !!!
